Instructions

Boil the Eggs:

  • 1. Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer for 8-10 minutes.
  • 2. Transfer the eggs to a bowl of ice water to cool. Once cool, peel and quarter them.


Cook the Potatoes and Green Beans:

  • 1. In a separate saucepan, bring water to a boil. Add a pinch of salt and the small red or new potatoes. Cook for about 15 minutes or until the potatoes are tender but not mushy. Drain and let them cool.
  • 2. In the same pot of boiling water, add the trimmed green beans. Blanch them for 2-3 minutes until they are tender-crisp. Transfer them to a bowl of ice water to cool.


Prepare the Vinaigrette:

  • 1. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to make the vinaigrette. Set it aside.


Assemble the Niçoise Salad:

  • 1. On a large serving platter or individual plates, arrange the mixed salad greens as the base of your salad.
  • 2. Slice the cooked and cooled potatoes into thin rounds and place them on the greens.
