Instructions
Boil the Eggs:

2. Transfer the eggs to a bowl of ice water to cool. Once cool, peel and quarter them.
Cook the Potatoes and Green Beans:

1. In a separate saucepan, bring water to a boil. Add a pinch of salt and the small red or new potatoes. Cook for about 15 minutes or until the potatoes are tender but not mushy. Drain and let them cool.

2. In the same pot of boiling water, add the trimmed green beans. Blanch them for 2-3 minutes until they are tender-crisp. Transfer them to a bowl of ice water to cool.
Prepare the Vinaigrette:
