Instructions

  • 1. Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it with olive oil.
  • 2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • 3. Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. Remove from heat and let it cool for a few minutes.
  • 4. In a bowl, combine the cooked spinach, crumbled feta cheese, dried oregano, dried basil, salt, and black pepper. Mix well to create the stuffing mixture.
  • 5. Using a sharp knife, make a horizontal slit in each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through.
  • 6. Stuff each chicken breast with a generous amount of the spinach and feta mixture, gently pressing it into the pocket. Secure the openings with toothpicks to keep the stuffing intact.
